Greek Chicken Skillet

Greek Chicken Skillet

Ingredients:

  • 4 Organic Chicken Breast (4oz pieces)
  • 1 Tsp Paprika
  • 1 Tsp of Oregano and Parsley
  • ¼ Tsp Garlic Powder
  • ¼ Tsp Sea Salt, Pepper
  • Lemon Juice (1/2 fresh lemon)
  • 2 Tbsp Avocado Oil
  • ½ Red Onion (rough chop)

Directions:

  • Trim the fat off chicken then place in a large bowl
  • Add in all the ingredients and mix well
  • Cover and place in the fridge to let marinate as you prepare the sweet potato hash (let marinate for at least 1 hour)
  • When ready to cook, heat a cast iron skillet and add 1 tbsp avocado oil. Place chicken onto pan and cook for about 5 min before flipping. (When it is ready to flip it will peel right off the pan, if its sticking let it cook longer)
  • Continue to cook for another 5 minutes or until there is no longer pink inside

Sweet Potato Hash

Ingredients:

  • 4 Large Sweet Potato (1 inch cubes)
  • 2 Tbsp Olive Oil
  • Salt, pepper
  • Dried Oregano

Directions:

  • Preheat oven to 400 F
  • Cube sweet potatoes and place in a large bowl. Add in other ingredients and toss.
  • Line and grease a large baking sheet
  • Place sweet potatoes on tray make sure they are not overlapping.
  • Bake for 25-30 min or until they are soft to touch
