Greek Chicken Skillet
Ingredients:
- 4 Organic Chicken Breast (4oz pieces)
- 1 Tsp Paprika
- 1 Tsp of Oregano and Parsley
- ¼ Tsp Garlic Powder
- ¼ Tsp Sea Salt, Pepper
- Lemon Juice (1/2 fresh lemon)
- 2 Tbsp Avocado Oil
- ½ Red Onion (rough chop)
Directions:
- Trim the fat off chicken then place in a large bowl
- Add in all the ingredients and mix well
- Cover and place in the fridge to let marinate as you prepare the sweet potato hash (let marinate for at least 1 hour)
- When ready to cook, heat a cast iron skillet and add 1 tbsp avocado oil. Place chicken onto pan and cook for about 5 min before flipping. (When it is ready to flip it will peel right off the pan, if its sticking let it cook longer)
- Continue to cook for another 5 minutes or until there is no longer pink inside
Sweet Potato Hash
Ingredients:
- 4 Large Sweet Potato (1 inch cubes)
- 2 Tbsp Olive Oil
- Salt, pepper
- Dried Oregano
Directions:
- Preheat oven to 400 F
- Cube sweet potatoes and place in a large bowl. Add in other ingredients and toss.
- Line and grease a large baking sheet
- Place sweet potatoes on tray make sure they are not overlapping.
- Bake for 25-30 min or until they are soft to touch
