- 6 eggs
- 5 tbsp coconut oil, melted
- 3 Tbsp almond coconut milk
- 2-3 scoops Vanilla WPI
- 2 Tbsp fresh lime juice
- 3 ripe bananas smashed
- 1 cup coconut flour
- 1tsp baking powder
- 1/4 tsp sea salt
Preheat oven 350
Grease loaf pan with coconut oil or cooking spray
Mix together coconut flour, WPI, baking powder and sea salt
In another mixing bowl: beat eggs, cooled coconut oil, milk, and lime juice until well combined. Then add bananas and mash. Add dry ingredients and blend well. Add blended mixture to loaf pan and cook for 30-40 minutes or until toothpick comes clean. Let cool and then remove from loaf pan. Serves 10.
I usually freeze the bread and then toast it with some sunflower butter when we want to eat it :)
