- 1 cup raw cashew butter
- 3 tbsp coconut flour
- ½ c unsweetened reduced fat coconut shreds
- 2 tbsp honey
- 1 tbsp grated lemon zest
- 2 tbsp lemon juice
- 1 tbsp poppy seeds
- pinch of sea salt
- Roll the dough into tightly packed 1-inch balls. Sprinkle with left over poppy seeds and coconut shreds to garnish. Store in an airtight container in the fridge or freezer.
- Note: Add in another tbsp of protein powder if mixture is too wet. If mixture is too dry add in a tbsp of almond milk.
