Superfood Salad
Ingredients:
- 2 C Organic spring mix
- ¼ C Organic Sprouts
- ¼ C Red Quinoa (cooked)
- ¼ C Chickpeas
- 2 Tbsp Red Onion (diced)
- ½ Bell Pepper (julienne cut)
- 2 Tbsp Sliced Carrots
- Sliced Beets (2)
- Sliced Cherry Tomato (3)
- Sliced Radishes (3)
- 3 Small Slices Avocado
- 1 Tb Hemp Seeds
- 1 Tb Reduced Sugar Dried Cranberry
Creamy Lemon Herb Dressing
Ingredients:
- ½ C Fat Free Greek Yogurt (organic silken tofu as dairy free sub*)
- 1/4 C Olive Oil
- 3 Tb Lemon Juice
- ½ C Parsley
- ½ C Cilantro
- ½ C Chives
- 1 Garlic Clove
- Salt and pepper to taste
- 1 Tbsp Honey (acts as emulsifier)
Directions:
In a blender, combine all ingredients. Pour into a mason jar to store in the fridge. Chop ingredients then combine in a large salad bowl. Drizzle dressing on top and enjoy!
