Ingredients:

  • 2 C Organic spring mix
  • ¼ C Organic Sprouts
  • ¼ C Red Quinoa (cooked)
  • ¼ C Chickpeas
  • 2 Tbsp Red Onion (diced)
  • ½ Bell Pepper (julienne cut)
  • 2 Tbsp Sliced Carrots
  • Sliced Beets (2)
  • Sliced Cherry Tomato (3)
  • Sliced Radishes (3)
  • 3 Small Slices Avocado
  • 1 Tb Hemp Seeds
  • 1 Tb Reduced Sugar Dried Cranberry

Creamy Lemon Herb Dressing

Ingredients:

  • ½ C Fat Free Greek Yogurt (organic silken tofu as dairy free sub*)
  • 1/4 C Olive Oil
  • 3 Tb Lemon Juice
  • ½ C Parsley
  • ½ C Cilantro
  • ½ C Chives
  • 1 Garlic Clove
  • Salt and pepper to taste
  • 1 Tbsp Honey (acts as emulsifier)

Directions:

In a blender, combine all ingredients. Pour into a mason jar to store in the fridge. Chop ingredients then combine in a large salad bowl. Drizzle dressing on top and enjoy! 110 Cals Per Serving (1.5 Tbsp) What makes this salad super? Check out some of the health benefits of the ingredients:
